Eastern European folk art, at a Paris table.
Boubalé is Assaf Granit’s restaurant at Le Grand Mazarin in Paris, a journey through the colours and flavours of Eastern Europe and the Mediterranean. The identity is built from Moravian, Polish and Czech folk painting: hares, foxes, boars and blooms, in a palette that behaves like embroidery rather than print.
